What are the components of gum arabic?

Gum Arabic is composed of two components, 70% of which is composed of polysaccharides without N or with a small amount of N, and the other is a protein structure with high relative molecular mass. Polysaccharides are covalently combined with hydroxyproline and serine in the peptide chain of proteins, with a total protein content of about 2% and special varieties as high as 25%. The polysaccharide molecules connected to proteins are highly branched acidic polysaccharides, it has the following composition: D-galactose 44%,L-arabinose 24%,D-glucuronic acid 14.5%,L-rhamnose 13%, 4-O-methyl-D-glucuronic acid 1.5%; In the main chain of gum arabic, β-D-galactopyranose is linked by 1,3-glycosidic bonds, while the side chains are linked by 1,6-glycosidic bonds
